Long time no write

Well hello!

I know that it has been a very long time since my last post. However, with school and still trying to live a normal life with the family has been a challenge. Today I was reading some of my fellow bloggers posts and realized that I missed posting myself. So here I am! I know that I probably will not be an every meal, event, or daily poster but I am coming back.

Today has been a wonderful fall day. Started out sunny and crisp, but then turned cold and gray. I know most would be bummed to see the sun go, but I like the transformation. Since the sun decided to leave for the day, and the gray cold day come to visit. I figured a big pot of beef stew and nice crusty bread would be fitting for dinner! After class I ran to the store and grabbed the items that I needed to make the meal. (photos and comment posted later)

Breakfast was pretty basic, Sliced apple sprinkled with nutmeg and a little FF-caramel.

Lunch was on a whim, I didn’t really want to make anything per say so I tossed a salad together. Honestly this salad hit the spot! I had taken a little break from eating salad because I was really bummed about not being able to get fresh greens from the farmers market. However the other day I broke down and grabbed a couple of heads of  romaine. 

1/2 cup of chick peas,about 2 cups romaine, and 1/4 cup sun-dried tomato feta

Well I better get back to studying, because it’s never ending!

Chocolate Dreams

I have found a new love! I have seen many bloggers give this chocolate PB rave reviews and I can tell you that this stuff is fabulous!!! Thanks to Wal-mart I can get this yummy goodness on a regular basis.

Today has consisted of me chillin out at home not doing a whole lot of anything. I do have plans for later this afternoon to take a walk down town and do a little shopping and also getting a little movement in my life.  The last 6 months I have been struggling to get any kind of activity. I chalk it up to having some personal issues going on and not being able to motivate myself. To make a long story short finding that healthy tipping point has been alouding me, and am ready to make changes so that I may live a long and happy life!

Ok, on to better things! Lunch…I did not have a lot to work with because of lack of shopping.  However, I remembered that I had a Lean Cuisine veggie pizza in the freezer. Not the best lunch but over all it was yummy.

I will buy this pizza again just for the simple fact that it was good and it was something easy that I can keep around in case of those times when I am in lack of food!

I have decided that I am going to start posting my personal goals daily, and I hope by doing this that I will be more focused on that goal for the day. Today’s goal is to find an activity that I can do tomorrow and to take a walk this evening with my sweetie.

Making a come back!

Good morning!

I know that I have taken a very long vacation from the blog, and for that I am very sorry. I am not going to go into great detail of my lack of blogging action, but I will say that I have decided that I miss sharing with all my fellow people.

My plan from here on out is to talk about my daily life and relationship with food and exercise or lack there of! I have struggled for years with food and exercise and how to change my life for the better. My goal is to find that Heathy Tipping Point, and to just feel better physically and mentally. I hope that you all can enjoy my journey and assist me with any and all advise.

taking a break

I know that it has been some time since I have actually written for you all, and I am sorry.

Some things have come up and I will be taking a short break so that I can focus on taking care of those points in my life. I miss you all and I miss writing, but at this time I need to focus my energy on certain points.

I hope to be back sooner than later!

Good morning everyone!

I started my morning out much later then I wanted so this will be a quick post. I started the day off with overnight oats/oats in a jar. At first I was sad to see the end of my honey AB but then decided to relish in the ending of it with oats in a jar. The one problem is I am trying to use up the yoplait greek yogurt that is about to expire. I will never again purchase that brand. 😦 So my oats have a chalky texture, but I tossed in a big scoop of AB and it has really helped.

1 yoplait strawberry greek yogurt

1/2 c oats

1/4 c almond milk

1 tbsp flax seeds

1 1/2 tbsp A butta

Sad to say this was not the best attempt of oats in a jar! However I at least now know not to buy Yoplait greek yogurt in the future.

Well kids I need to get going I need to get some more reading done, but I will be posting later tonight about my lunch with my family. We are going to family favorite  T. Maccarone’s! They serv some wonderful food, and I can’t wait to have a lovely lunch with my family.

How have you all been? Good I hope!

I know that I have been MIA for a few days, and I do plan to make up for the lost time! 😉

Tonight I made a sesame noodle stir-fry with tofu, and I do have to say that it was pretty yummy.

 Josh thought that next time the noodles should be cooked last so that they don’t get over done like tonight. The problem with that is dinner was done and perfect but he was off over at his buddies apartment next door, and decided to get home in his own sweet time!

I however thought they were still good. I placed my helping on a bed of spinach for some bulk purposes. It tasted good too! A little while later I had about a cup of frozen peach yogurt. Sorry I forgot to snap a picture since I was watching Julie & Julia. The movie was very good, and it was nice to see that she was just like me in a way. Ok maybe not but I loved the idea of taking a cookbook and working my way through it! In fact I think starting July I will choose a cookbook to make as many items as I can for the month of July, and then report to you all with the final product. I should give this a little more thought but what the hell right?

Well I’m off to bed! I have an early day tomorrow since I really should study some more for my medical terminology quiz that has to be completed by tomorrow evening.

Do you think I should choose a cookbook to cook from and review the final product for you all? What type of cookbook, and do you have any suggestions?

Just thought I would make a brief post letting you all know that I am still with the world. Well maybe in my own world but I am here. It was a fun and long weekend and I have a very early morning coming my way.

Well since I had such good reviews of Olive market and cafe, Josh has decided that he wants to go have lunch today since he took the day off at my request! 🙂 We were planning on going to Aloha my favorite sushi restaurant, but I can honestly say I am completely ok with going back to Olive again today!

To start my morning out I a cup of coffee the always, but for some reason I was craving hummus. So I pulled out some black olive hummus, turkey breast, ww english muffin, mushrooms, cilantro and tossed this yummy sammie together!

Last night I made tofu and green beans, I made a sauce with 1 tbsp PB, 1 large chunk of ginger minced, soy sauce, minced lemon grass. This turned out super yummy and I will be making again, and it was a huge hit with Josh!

After lunch today Josh and I are heading out of town for a graduation and party! I can’t honestly say how much I will be posting but I am bringing the lap top so that Josh and I can get some work done over the weekend. I need to get going, I need to shower and get my nails done.

The sun makes an appearance

Rain, rain go away…come back another day…and thats just what it did to!

Lunch with my grandmother was a blast, we got to try one of the newest restaurants to open in the last couple months. Olive market and cafe specialize in fresh prepared foods, farm raised beef, sustainable fish, charcuterie, artisinal cheese, pastries, fine wines, gourmet sandwiches, flatbreads, pizza, coffee, tea and more. I was very pleased with our food, I do wish I had not forgotten my camera! I did however get a couple very poor shots with my phone.  After just a brief look at the lunch menu I decided to have the Greek “falafel”salad this salad had romaine heart, mixed green, greek olive, tomatoes, cucumber, feta cheese, crispy falafel, balsamic vinaigrette. HOLY YUM, and if that wasn’t enough I also had to try a cup of their mediterranean veggie soup that is amazing!

I am very sad that these pictures do not give this meal justice, but I suppose they are better than nothing! I also enjoyed and shared a strawberry shortbread square with my grandmother, but due to the horrible picture that was taken I will just say that it was Super yummy and I will looking for it the next time we go.

After lunch and a nice visit I had some shopping at Wal-mart that I needed to get done. I have been wanting to get a wok, and since I used one over at Josh’s mothers house this past weekend I decided I had to have one.  I was very disappointed to see there was only 1 wok to choose from, but it was only $13.97 so we shall see how it holds up. I also found a really cute pair of shorts and a couple of tank tops, so I should be set for the summer. 😉

I need to get going it’s almost 8 and I still havent started dinner, and I am looking forward to trying the new wok!
